Bulk Products

Red King crab is caught by baited with cod and other fish wire pots and then processed on board of crab catcher processors at sea.  Crab is split in two sections, cooked, frozen in brine and packed in 22 kg cases.  Each section consists of three walking legs and one claw.  Sections are graded by weight in grams:

900-1100

1100+


 Each case is labeled with a section weight, vessel name, origin and a production date.  These frozen sections are referred to as bulk.

 

Leg and Claw Packs

Frozen sections are cut at shoulders to make individual legs and claws.  Legs and claws are graded by size to determine the product count and then packed into 20 lbs boxes.

The count refers to the number of legs per 10 lbs box.  Claws are packed in their natural proportion of one claw per three walking legs.  The smaller claw is referred to as “feeder” claw and the large one is called “killer” claw.

We pack 6/9, 9/12, 12/14, 14/17 and 16/20 boxes.  For example 6/9 means 6 to 9 legs and 2, 3 claws per 10 lbs box.  That means that
20 lbs box will have 12-18 legs and 4-6 claws.

Each box is labeled with its count, net weight, product origin, facility where it was processed and a date.

By-Products

Processing Red King Crab bulk into Leg and Claw pack generates some by-products.

Merus and Select Portions are graded by their weights in oz and packed into 10 lbs boxes. Merus is graded as 2-4, 4-6 and 6-8. Select Portions are graded as 3-5, 5-7 and 7-9.
